1. In nonstick skillet over medium heat, cook eggs as desired with a small amount of butter or oil to desired doneness & reserve, holding warm. In same pan, heat ham slices for 20-30 seconds per side or until lightly browned & heated through.
2. Spread pesto on bagel halves & assemble sandwiches with arugula, cheese & ham, topping with egg. Sprinkle salt & pepper to taste & serve warm for a satisfying breakfast sandwich anytime of the day!
3 cups fresh basil leaves, roughly chopped
2 garlic cloves, roughly chopped
½ cup shredded Parmesan cheese
¼ cup pine nuts (can substitute almonds or even walnuts for a different flavor)
½ cup olive oil
1. In food processor, pulse basil, garlic, cheese & nuts until finely chopped. Blend in oil in thin stream until incorporated & reserve until needed. Refrigerate any unused pesto for up to two days.
