Thai Pork Burritos
Fresh cilantro, ginger, coriander and a hint of lime and honey are just a few good-idea flavors in this Mexican recipe with a twist. The cole slaw mix with carrots adds a sweet crunchiness too.

Ingredients

1 pound Smithfield Ground Pork

2 T. grated fresh ginger root

1 garlic clove peeled and crushed

1 small onion thinly sliced

2 c. cole slaw mix with carrots

1 t. sesame oil

3 T. soy sauce
-
2 T. lime juice
-
1 T. honey
-
2 t. ground coriander
-
1/2 t. crushed red pepper

4 large (10-inch) flour tortillas warmed

Fresh cilantro chopped (garnish)
Steps
Heat large nonstick skillet over high heat. Add pork, cook, crumble and stir until pork is no longer pink; about 3 to 4 minutes. Add ginger, garlic, onion and cole slaw mix and stir-fry with pork for 2 minutes until vegetables are wilted. Combine all remaining ingredients except tortillas and cilantro in small bowl and add to skillet. Stir constantly to blend all ingredients well about 1 minute. Spoon equal portions of mixture onto warm flour tortillas; garnish with cilantro; roll up to encase filling and serve.
Serving Suggestions
Garnish with cilantro and serve with a fresh cucumber salad.
