Susan’s Caldo Soup
A hearty, easy to fix soup for a cold day.

Ingredients

1/2 pound Smithfield Naturally Hickory Smoked Sausage

2 tablespoons butter

Small diced onion
-
Three 14-oz. cans chicken broth

5 small new red potatoes, quartered

1 teaspoon House Seasoning (recipe below)

One 10-oz. package frozen chopped collard greens

Steps
Cut the sausage into 1/4-inch slices. Melt the butter over medium heat in a large saucepan; add the onion and sausage, and sauté until the onion is transparent, about 10 minutes. Add the collard greens, potato wedges and chicken stock. Cover and cook for 20 minutes longer.
Serving Suggestions
Serve with sour cream biscuits.
