Sunshine Baby Back Ribs
Here's a bright idea. Tender baby back ribs with a little citrus a little sweetness and just a hint of mint. Put them on the grill or cook them in the oven. Just be sure to baste them regularly and save a little sauce to serve on the side.

Ingredients

6 pounds Smithfield Pork Back Ribs

2 T. cornstarch

2 T. packed brown sugar

1 T. minced fresh mint leaves

1/4 t. salt

2 c. fresh orange juice

2 T. fresh lime juice

1 t. grated lime peel

1 t. grated lemon peel
Steps
Combine cornstarch, brown sugar, mint and salt in medium saucepan; gradually stir in orange and lime juices. Cook and stir until thickened. Remove from heat; stir in lemon and lime peel. Cut ribs into serving-size pieces. Brush ribs with sauce. Place on broiler pan. Cover with foil. Bake at 350 degrees F. for 1 to 1 1/2 hours or until tender. Remove foil. Brush with additional sauce. Heat remaining sauce and serve with ribs.
Serving Suggestions
Serve with creamy cole slaw, fresh corn and extra sauce.
