Santa Fe Meat Loaf
Everyone likes a meatloaf sandwich and this one they’ll love. A seeded jalapeno pepper gives this classic meatloaf its zip. Be sure to wear gloves when handling a hot pepper - the juice is strong and you don’t want to accidentally rub it into your eyes.

Ingredients

2 pounds Smithfield Ground Pork

1 t. vegetable oil

2 medium onions finely chopped

4 garlic cloves crushed

1 jalapeno pepper seeded and minced (wear rubber gloves when handling hot pepper)

4 T. minced dried tomatoes

1 T. chili powder

1 t. ground cumin
-
1 1/2 t. salt
-
1 t. thyme
-
1/2 t. cayenne
-
1/2 c. finely chopped parsley
-
1/2 c. dried bread crumbs

1/2 c. skim milk
Steps
In large nonstick skillet heat oil over medium-high heat. Sauteé onions and garlic until soft about 10 minutes; cool slightly and transfer to large bowl. Add all remaining ingredients and mix thoroughly. Place mixture in a 9 x 4 1/2 x 2 1/2-inch loaf pan and bake in a 350 degree F. oven for 1 1/2 hours. Remove from the oven and allow to rest 10 minutes before removing from pan. Slice to serve warm or wrap well and refrigerate for sandwiches.
Serving Suggestions
Serve in a sandwich with soup or with a side of sauteed hominy and warm tortillas.
