Puerto-Rican Style Pork Roast
Caribbean flavor is added to a simple pork roast

Ingredients

1 (3-pound) boneless Smithfield Pork Loin Roast, rolled and tied

6 cloves garlic, peeled

1 teaspoon salt

1 teaspoon dried oregano

3/4 teaspoon ground cumin

3/4 teaspoon pepper

About 1/2 cup dry white wine or beef broth

Steps
Preheat oven to 450 degrees. Place garlic, salt, oregano, cumin, and pepper in a mortar; mash into paste with pestle. Rub all over pork roast. Place meat on rack in a roasting pan. Roast 15 minutes. Open oven and pour 1/2 cup wine over roast. Close oven, reduce heat to 325 degrees F. Continue to roast, adding about 1/4 cup wine every 15 minutes. If liquid accumulates on bottom of roasting pan, use it to baste. Roast until an instant-read thermometer registers 160 degrees F. Transfer meat to a platter; let stand 15 minutes before slicing.
