Morning Sunshine Deviled Eggs

Something ordinary made extraordinary! All the tastes of breakfast in one bite.

Serves: 6
Cook Time: 10 Minutes

Smithfield Product: Bacon

Ingredients

  • 1/2 cup Smithfield bacon, cooked crisp and crumbled, reserve 2 tablespoons for garnish
  • 6 large eggs, hard-boiled and peeled (see "Foolproof Hard Boiled Eggs")
  • 1/4 cup mayonnaise
  • 1/2 teaspoon dry ground mustard
  • 1/2 teaspoon white vinegar
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 oranges cut into 6 wedges each

Steps

With a fork, mash the egg yolks until fine. Add the mayonnaise, mustard, vinegar, salt and pepper to the egg yolks. Mix well. Add a bit more mayonnaise if mixture is too thick. Stir in the chopped bacon. With a small spoon or a pastry bag fitted with a very large fluted tip, fill the empty egg-white shells with the yolk mixture. Garnish with crumbled bacon bits and serve an orange wedge on the side!
