Hot and Spicy Spareribs
This summertime favorite features the classic sparerib sauce everyone loves.

Ingredients

1 3-pound rack Smithfield Pork Spareribs

2 T. butter or margarine

1 medium onion finely chopped

2 cloves garlic minced

1 15-ounce can tomato sauce

2/3 c. cider vinegar
-
2/3 c. firmly-packed brown sugar

2 T. chili powder
-
1 T. prepared mustard
-
1/2 t. pepper
Steps
Melt butter in a large skillet over low heat; add onion and garlic and sauteé until tender. Add remaining ingredients except ribs and bring to a boil. Reduce heat and simmer for 20 minutes stirring occasionally. Place ribs on grill meatiest side down about 6 inches above low coals or over indirect heat (banked coals). Close grill hood. Cook for 20 minutes; turn. Cook for 45 minutes. Baste with sauce close grill and cook 10 minutes. Turn ribs baste and cook 10 minutes more. Serves 3.
Serving Suggestions
Serve with creamy coleslaw steamed new potatoes and corn-on-the-cob.
