Ground Pork Bolognese
Forget the canned sauces, fix this hearty homemade sauce with your favorite pasta. Serve with plenty Parmesan cheese, warmed garlic bread, and mixed greens salad.

Ingredients

1/2 lb. Smithfield Ground Pork

1 Small Onion

1 Large Carrot

1 Celery Stalk

1 tbsp. Garlic Chopped

4 tbsp Oil

1 cup Red Wine

1 cup Chicken Stock or Water

12 oz. Tomato Sauce

1/4 tsp. Nutmeg

1/2 cup Heavy Cream

1 tsp. Grated Parmesean Cheese

1 pinch Salt & Pepper
Steps
Combine the first four ingredients and puree inside a food processor. Heat 2 tbsp. oil inside a large size pot and add the puree. Simmer and stir puree for approximately 5 minutes or until becomes tender. Add wine stock, tomato sauce and nutmeg. Bring to a boil and simmer. Heat remaining oil inside medium sauté pan and add the ground pork. Season with salt and pepper. Using a fork to stir, cook meat until it is 75% cooked. Then combine the meat with tomato sauce mixture. Simmer the meat sauce mixture for a minimum of 35 minutes. Approximately 15 minutes before serving add cream; taste, season and simmer. Using meat sauce dress your favorite pasta and garnish with cheese. Bon Appetit!
