Grilled Chops with Spicy Peaches
This meal is easy enough for a weeknight dinner, but has a kick that's perfect for a backyard barbecue.

Ingredients

4 Smithfield pork chops, about 3/4-inch-thick, trimmed

1 tablespoon grated ginger, divided

1/2 teaspoon ground cumin

1/4 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 teaspoon pepper

1 large garlic, crushed

2 tablespoons extra-virgin olive oil

2 large peaches, peeled and quartered

Garnish: mint leaves
Steps
Mix 1/2 tablespoon ginger, cumin, cinnamon, salt, pepper, and garlic in a small bowl. Rub mixture into pork chops.
Coat the bottom of a grill pan with 1 tablespoon olive oil; place over medium heat. Place pork chops on grill pan; cook until well marked on bottom, 5 to 6 minutes. Turn chops and arrange peaches around pork chops; sprinkle remaining 1/2 tablespoon ginger on peaches. Continue cooking until peaches are soft and pork is cooked through, turning peaches to mark all sides, 5 to 6 minutes.
