Fried Ham and Rice Balls
A great appetizer made with items from your pantry!

Ingredients

1 cup Smithfield Ham, cooked and finely chopped

2 eggs, whisked

2 cups rice, cooked and cooled

1 (1 ounce) package Fried Rice Seasoning Mix

3 scallions, chopped

2 cups vegetable oil, divided

1 cup Panko breadcrumbs

Prepared Sweet and Sour Sauce
Steps
Heat a large skillet or a wok to very hot. Add two tablespoons vegetable oil. Add eggs and cook, stirring constantly until softly scrambled. Remove from the pan and set aside. To the hot oil, add the Smithfield ham, rice, fried rice seasoning mix and scallions and stir fry for 3 minutes. Remove from heat and stir in the cooked eggs. Allow to cool until warm to the touch. Heat remaining oil in a deep sauce pan to 360 degrees F. Pour Panko into a shallow dish. While oil is heating, form fried rice mixture into appetizer size balls and roll in Panko breadcrumbs to coat. Deep fry balls in oil just until golden brown (approximately 30 seconds). Serve with prepared Sweet and Sour sauce for dipping.
