Cherry Mustard Grilled Pork Tenderloin
A sweet and savory tenderloin that is sure to please a crowd.

Ingredients

2 Smithfield Pork Tenderloin (approx. 15-18oz)

2 T. Creole Style Mustard

2 T. Cherry Jam or preserves

3 T. Vegetable Oil

1 T. Rosemary fresh chopped

1 c. Fresh pitted cherries

1 c. Port wine

1 c. Beef or chicken stock low fat

1 Garlic Clove smashed

1 T. Butter
Steps
Preheat grill to medium high and oven to 350 degrees F. Inside a medium size baking dish combine the first 6 ingredients. Using your hand coat each tenderloin evenly with mustard, oil and jam. Cover and rest for 5 minutes. Inside a small sauce pan combine cherries, wine, stock, garlic clove and simmer on med-low heat. Simmer until the sauce is reduced by half. Grill tenderloins on each side for 3 to 4 minutes per side. Remove tenderloins from grill to baking dish and bake for approximately 12-15 minutes or until an internal temperature of 160 degrees F;. Remove from oven. Complete sauce by seasoning to taste with salt, pepper and butter. Slice tenderloin; dress with sauce and garnish with cherries.
