Cajun Pork Roast
Pungent, peppery and popular Cajun flavors give this tender roast its punch. Gather your spices (and a group of friends) for a meal that only looks like it took all day. Garnished potatoes make a nice accompaniment as does a steamed dark green vegetable such as broccoli.

Ingredients

2 pound Smithfield Boneless Pork Roast

3 T. paprika

1/2 t. red pepper (cayenne)

1 T. garlic powder

1 t. oregano
-
2 t. thyme
-
1/2 t. salt

1/2 t. white pepper ground

1/2 t. cumin

1/4 t. nutmeg
Steps
Combine all seasonings and rub well over all surfaces of roast. Place roast in shallow pan and roast in 350 degree F. oven for about an hour until internal temperature is 155 to 160 degrees F. Remove from oven let rest 5 to 10 minutes before slicing.
Serving Suggestions
Serve with roasted new potatoes and refreshing fruit salad.
