Buffet Ribs and Bacon
Meaty ribs cooked in a delicious sauce.

Ingredients

4 pounds Smithfield Baby Back Ribs

1 pound Smithfield Bacon, chopped fine

Salt and pepper

1 large onion, thinly sliced

1 cup ketchup

2 tablespoons red wine vinegar

2 tablespoons Worcestershire sauce

1/2 cup dark brown sugar

1/2 cup crushed canned pineapple

1/4 cup mango or guava juice (optional)

1 tablespoon liquid smoke

3/4 cup Water
Steps
Preheat oven to 350 degrees F. Place ribs in a large roasting pan. Salt and pepper thoroughly and top with bacon and onions. In a medium bowl, combine ketchup, vinegar, Worcestershire sauce, brown sugar, pineapple, mango juice, liquid smoke and water. Pour sauce over ribs. Cover with foil, and bake for 2 1/2 to 3 hours. Finish off on the grill to caramelize the outside.
Serving Suggestions
Bake ribs ahead of time and finish off on the grill at the game.
