Sweet Crusted Pork Tenderloin Bites

Try serving these tenderloin bites by themselves or on bruschetta.

Smithfield Product: Pork Tenderloin

Ingredients

  • 2 lbs. Smithfield Pork Tenderloin
  • 1 jar Grey Poupon mustard
  • 1/2 cup light brown sugar
  • 1/2 cup raisins
  • 1/2 tsp ground cinnamon
  • 2 tbsp honey
  • 1 salt & pepper to taste

Steps

To prepare the Smithfield Tenderloin Bites, cut the pork tenderloin into half-inch rounds. Place them on a cookie tray. Salt and pepper them and put them in your oven using the broiler at 350 degrees. Cook the first side for about two minutes. Take the tray out of the oven and turn over each piece. Then salt and pepper them again. Next, coat each piece with the mustard. Sprinkle on a small amount of honey. Place about three to four raisins on top, then sprinkle a pinch of cinnamon and a sprinkle of brown sugar. Place the tray back into the oven for two to three minutes until the brown sugar has melted, then serve hot as finger foods.

Serving Suggestions

Watch the second cooking carefully so you do not burn the sugar. You can use toothpicks or cocktail forks for serving.
