Sweet and Spicy Cornhuskers Pudding

A simple side with just enough sweet and spice. Perfect for game day or any day.

Ingredients

  • 5 eggs, lightly beaten
  • 1/3 cup butter, melted
  • 2 tablespoons sugar
  • 1/2 cup milk
  • 4 tablespoons cornstarch
  • 4 cups frozen whole kernel corn
  • 1 can cream-style corn
  • 1 cup Monterey Jack Cheese with jalapenos, shredded
  • Salt and pepper to taste

Steps

Preheat oven to 400 degrees F. Spray a 2 quart baking dish with a non-stick cooking spray. Set aside. In a large mixing bowl whisk together eggs, melted butter, sugar and milk. Whisk in cornstarch. Stir in corn, creamed corn and cheese. Pour into prepared casserole dish and bake for 1 hour.
