Cook Time: 15 Minutes
Cook ham sausage according to package directions. Drain and cut into ˝-inch pieces. Set aside. Heat 1 tablespoon vegetable oil in large skillet; pour in eggs and stir-fry for 1 minute. Remove from pan; cut into small pieces and reserve. Add remaining tablespoon vegetable oil to pan and sauté mushrooms and red pepper for several minutes; add green onion, bean sprouts and peas. Stir-fry several minutes. Add sesame oil to pan; reduce heat and add rice, cooked ham sausage and cooked egg. Stir until rice is heated; add soy sauce. Combine well and serve. If desired, serve with additional soy sauce or try adding small shrimp.
