Cook Time: 5 Minutes
Heat grill until medium hot. Cut each smoked sausage into 3 strips lengthwise. Cook strips just until browned. This should only take a couple of minutes on each side. (Remember, your smoked sausage is already fully cooked.) While sausage is cooking, mix the mayonnaise and curry together in a small bowl. To assemble the sandwiches, spread one tablespoon of mustard on one side of each of the baguette. Spread one tablespoon of the curry mayo on the other side of each baguette. Fill each sandwich with 3 of the strips of cooked sausage. Top each sandwich with one tablespoon of onions, 1 tablespoon of alfalfa sprouts, a dash of celery salt and fresh cracked pepper.

One of the best sandwiches I've had in a long time! Love the curry mayo with the smoked sausage. I didn't have a grill, so I just steamed the sausage and it was great!
