Santa Fe Nights Rub

A wonderful blend of three different chilis combined with an earthy cumin and sweet dark sugar make this a delicious rub for beef and pork.

Ingredients

  • 2 tablespoons chili powder
  • 2 tablespoons paprika
  • 1 tablespoon ground coriander
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano, crushed
  • 3 teaspoons ground cumin
  • 2 teaspoons ground chipotle pepper
  • 1 teaspoon crushed red pepper flakes
  • 1/4 cup dark brown sugar
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons kosher salt

Steps

Mix all ingredients. Massage enough of rub mixture into meat to coat. Cover and refrigerate 12 to 24 hours. Before cooking, coat again with rub mixture. Barbeque bake or broil your meat as desired. Leftover rub can be stored in an airtight container for up to 3 months.
