Running Back Stuffed Bread

Looks like a football, but is an amazing hot stuffed sandwich.

Smithfield Product: Luncheon Meat

Ingredients

  • 1/2 tub of Smithfield Deli Thin Tub Ham (any)
  • 1/2 tub of Smithfield Deli Thin Oven Roasted Turkey
  • 1 football shaped loaf of bread (Pumperknickle or whole wheat looks best, but any loaf will do)
  • 3 tablespoons olive oil, divided
  • Salt and freshly ground pepper
  • 1/2 cup of prepared pesto sauce, divided
  • 8 slices of provolone cheese, divided
  • 1 jar of roasted red peppers, drained
  • 1/2 cup of pine nuts, toasted

Steps

Preheat oven to 350 degrees F. Cut an oval shape from the top of the loaf a bread creating a large opening. Hollow out the bread on the inside leaving a 1/4" covering all sides. Brush the inside of the hollowed out bread with olive oil. Sprinkle with salt and freshly ground pepper and place in the oven for 5 minutes. Remove from the oven and allow to cool until cool enough to handle. Working in layers, start with 1/4 cup pesto, half of the cheese, pine nuts, ham, roasted red peppers, turkey, remaining half cup pesto and remaining cheese. Drizzle remaining 1 tablespoon of olive oil over top. Replace bread piece that was cut from the top and wrap the entire loaf in two layers of heavyduty foil. Bake for 25 minutes. Cut and serve warm.

Note: Prebake for 20 minutes and finish off on the grill at the game for an additional 10 minutes.
