Combine chicken broth, raisins, and vinegar in a small bowl and set aside. Place a large, heavy skillet over medium-high heat until very hot. Add 1 tablespoon of the butter. When butter is melted and sizzling, add apples and sprinkle with sugar. Sauté until apple slices are golden brown, 6 to 8 minutes. Add broth mixture all at once; simmer until liquid is syrupy and reduced to about 3 tablespoons, about 1 minute. Transfer mixture to a bowl. Wipe skillet clean. Pat pork chops dry and season with salt and pepper. Place skillet back over medium-high heat until very hot. Add remaining 1 tablespoon butter. When butter is melted and sizzling add chops and sear until browned on bottom, 3 to 4 minutes; turn chops and sear until browned and pork is cooked through, 3 to 4 minutes. Transfer chops to serving plates and spoon apple mixture over.
