Pork Chop and Fresh Apple Saute

This summery dish of pork chops and seasonal apples is a great addition to your recipe repertoire.

Ingredients

  • 2 (3/4-inch thick) Smithfield Pork Chops
  • 1/3 c. low salt chicken broth
  • 2 T. raisins
  • 1 T. unseasoned rice vinegar
  • 2 T. unsalted butter, divided
  • 2 medium apples
  • 1 1/2 t. sugar
  • Salt and freshly ground pepper

Steps

Combine chicken broth, raisins, and vinegar in a small bowl and set aside.
Thinly slice apples. Place a large, heavy skillet over medium-high heat until very hot. Add 1 tablespoon butter and place over heat until melted and sizzling. Add apples to skillet; sprinkle with sugar. Sauté until apple slices are golden brown; 6 to 8 minutes. Add broth mixture all at once; simmer until liquid is syrupy and reduced to about 3 T., about one minute. Transfer mixture to a bowl. Wipe skillet clean. Pat pork chops dry and season with salt and pepper. Place skillet back over medium-high heat until very hot. Add remaining 1 T. butter and place over heat until melted and sizzling. Add chops and sear until browned on bottom, 3 to 4 minutes; turn chops and sear until browned and pork is cooked through, 3 to 4 minutes. Transfer chops to serving plates and spoon apple mixture over.
