Ham and Spring Vegetable Stir Fry

A fresh, filling and flavorful meal in 20 minutes!

Serves: 4
Cook Time: 7 Minutes

Smithfield Product: Spiral Ham, All Other Ham

Ingredients

  • 2 cups Smithfield Ham, cooked and diced
  • 2 tablespoons sesame oil, can substitute canola oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/2 small onion, finely chopped
  • 1/2 cup carrots, peeled and diced
  • 1/4 cup zucchini, cut into bite size pieces
  • 1/2 cup sugar snap peas
  • 1/2 tablespoon black sesame seeds, toasted (optional)
  • 2 tablespoons scallions, chopped
  • Salt and pepper to taste
  • 4 cups prepared white rice (optional)
  • Soy sauce (optional)

Steps

Heat a wok or large saute pan until hot. Add oil, garlic, ginger and onion. Stirring frequently. Add carrots and cook stirring frequently for 2 minutes. Toss in zucchini, sugar snap peas, ham and (optional) sesame seeds. Cook, stirring frequently for 3 to 5 minutes. Salt and pepper to taste. Toss in scallions. Serve as is with a little soy sauce or over white rice.

Serving Suggestions

Serve over rice. Also, feel free to substitute any vegetable you have on hand.
