Preheat grill. Dip peeled apples in lemon juice and water to keep from oxidizing. Prepare vinaigrette by combining apples, vinegar, apple juice, walnuts and honey in a blender until mixture turns to a liquid state. Next, while blending, add oil slowly to mixture, until all is incorporated. Season with salt and pepper to taste. Season pork chops with salt and pepper to taste. Pour all but 6 ounces of vinaigrette over seasoned pork chops. Cover and let stand for 20 minutes. While assembling the salad grill pork chops on medium high heat for 2-3 minutes or until internal temperature reaches 155 degrees F. Using a large bowl, combine julienne apples, lettuce, walnuts, tomatoes and 4-6 ounces of vinaigrette; toss salad. Serve with Smithfield grilled Pork Chop and enjoy!
Try serving with blue cheese and thyme croutons.
