Grilled Hot Dogs and Potato Salad

This hearty grill meal features precooked potato pieces, available in the produce section of the supermarket. Grill hot dogs and potatoes and toss with prewashed and cut salad greens and bottled vinaigrette.

Serves: 4
Cook Time: 20 Minutes

Ingredients

  • 1-1 1/2 pounds Smithfield Jumbo Hot Dogs or Jumbo Beef Hot Dogs, 4 Pieces
  • 1 18-ounce package diced cooked potato
  • 2 tablespoons olive oil
  • 1 10-oz. bag Italian salad greens
  • 1 red bell pepper, seeded and sliced
  • 1/2 cup balsamic vinaigrette, divided
  • 2 tablespoons minced chives

Steps

Prepare medium hot fire in grill. Grill hot dogs directly over fire, about 10-12 minutes, turning as necessary to cook evenly. Toss diced potato with olive oil and place in grill basket; grill, shaking basket gently to brown evenly, about 5 minutes. On shallow platter gently toss the salad greens, bell pepper, chives and grilled potatoes with the vinaigrette. Top with sliced hot dogs.

Serving Suggestions

Serve with hot French bread and red grapes.
