1st and 10 Sausage Chili

Spicy and meaty chili that will take the chill off any game day.

Cook Time: 2 Hours

Smithfield Product: Breakfast Sausage

Ingredients

  • 2 pounds Smithfield ground sausage
  • 1 large onion, chopped
  • 6 cloves garlic, chopped
  • 1/3 cup chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon dried basil
  • 2 (10.5 ounce) cans rotel tomatoes
  • 1 (4 ounce) can chopped green chilies
  • 1 (15 ounce) can tomato sauce
  • 2 (12 ounce) bottles of beer (can substitute water)
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons dark brown sugar
  • 1 tablespoon molasses
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper

Steps

In a heavy stock pan over medium heat, lightly brown sausage. Remove sausage from the pan and saute onions and garlic until onions are translucent. Stir in chili powder, cumin and basil and saute for 3 minutes. Add remaining ingredients including cooked sausage and simmer over a low heat for 2 hours. Serve game day with homemade corn muffins.

Serving Suggestions

Serve with corn muffins.
