Seasoning, salt, acid and base. These are the 4 pillars of every good marinade. Seasoning comes from herbs and spices. Salt from table salt, soy sauce or Italian dressing boosts flavor and tenderizes the meat. Get your acid from citrus juices and wine to break down the proteins and let the flavor in. Bases like olive oil or chicken stock provide even distribution of the ingredients without overwhelming the flavor of the dish.

The Method

Whisk together your ingredients and place it on a plastic bag or other airtight container and refrigerate for at least 30 minutes and up to 24 hours. Be sure to brush off the excess marinade before you put the meat on the grill. Medium heat makes the best results.
