Good Bye Holidays, Hello New Year

I don't know about you, but after spending the past two months in the kitchen, I am in no mood to cook. Since my family wouldn't be very happy with me if I just decided to throw in the towel on cooking, I'm always on a search for easy meals to make to give myself a bit of a break. I look for dishes that have relatively few ingredients and are easy to prepare. I also find that I rely more on my crockpot during these winter months. There is nothing better than coming home from a busy day and finding dinner already done!

My Ham and Three Bean Salad is ready in ten minutes and you can find all the ingredients you need in your pantry. Or try my Easy Slow Cooked Brunswick Stew, a southern favorite, in your crockpot the next time you need an easy, make-ahead meal. Casseroles are another one of my go-to favorites on nights when I don't feel like cooking. Check out my Penny Smith's Sausage Casserole for an easy week night dinner.

So don't give up on your kitchen just yet; there is still delicious, easy food to make.
