Buffalo Bleu Crostini

Serves: 8
Cook Time: 30 Minutes

Ingredients

  • 1 1/2 - 2 pound Smithfield Pork Tenderloin (self basting)
  • 1/4 cup plus 2 tablespoons buffalo wing sauce
  • 4 oz crumbled bleu cheese
  • 1/2 cup mayonaise
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice
  • 3 tablespoons melted butter
  • 1 clove crushed garlic
  • 1 french baguette cut into 16 slices 1/2" thick
  • 2 tablespoons fresh chopped parsley

Steps

Grill pork tenderloin over medium heat for approximately 8 - 10 mins each side. Baste during the last 2 mins each side with 1/4 cup of buffalo wing sauce. Remove to clean plate and cover with foil to rest for 10 mins.

Mix bleu cheese, mayo, sour cream and lemon juice in small dish. May be made 1 day ahead and chilled. Mix butter and garlic and brush on sliced baguette. Grill butter side down for 1 minute until lightly golden and place on serving tray.

Thinly slice the pork tenderloin. Spread baguette slices with 1 tablespoon of dressing, top with sliced meat and drizzle lightly with remaining wing sauce. Sprinkle with parsley and Serve!!!!
