1. To make marinade, mix together balsamic vinegar, soy sauce, brown sugar, garlic, salt, sriracha sauce, and ground mustard in large bowl. Add pork to marinade and mix well. Let marinate 1 hour.
2. Combine cucumber, jalapeño and rice wine vinegar in small bowl; set aside.
3. Drain pork from marinade; discard marinade. Heat oil in non-stick skillet over high. Sauté pork about 5 minutes until cooked.
4. Serve pork with lettuce leaves, cucumber mixture, green onions and lime wedges.
