Marinade
20 cloves garlic
1 bunch fresh cilantro
1 yellow onion, chopped
2 cups sour orange juice (or 1 1/2 cups orange juice and 1/2 cup lime or lemon juice)
5 tablespoons olive oil
5 tablespoons soy sauce
1 tablespoon adobo seasoning
Instructions
1. Make slits on outside of pork and insert 20 garlic cloves. Whisk together all marinade ingredients until well blended; pour over pork. Cover and refrigerate 24 hours.
2. Remove pork from refrigerator 1 ½ hours before putting in oven. Wipe marinade from meat surface and place, skin-side up, in roasting pan. Sprinkle 2 tablespoons salt over top.
3. Heat oven to 450°F. Cook pork for 1 hour. Turn oven down to 300°F; cook an additional 4 hours until pork is tender and breaks apart easily. Do not turn pork over while roasting.
4. Use tongs to pull pork apart in larger pieces and serve with Puerto Rican rice and fried plantains. Can also use pork for sandwiches.
