Ribs
2 racks Smithfield® Prime St. Louis Style Spareribs
2 tablespoons sherry vinegar
1/4 onion, diced
3 cloves garlic
1/2 cup olive oil
Salt and pepper
1/4 cup maple syrup
Hot or mild giardiniera (Italian pickled vegetables)
Instructions
1. Combine vinegar, onion, garlic and olive oil in blender; pulse until smooth. Season with salt and pepper. Brush onto ribs; cover and refrigerate for 1 to 2 days.
2. Heat charcoal or gas grill for 2-zone cooking; direct heat zone about 400oF. and indirect heat zone about 275°F.
3. Place ribs, meaty side up over indirect heat zone for 2 1/2 to 3 hours until tender. Move to direct heat zone and brush each rack with 2 tablespoons maple syrup. Grill 5 minutes to set.
4. Cut each slab in half and serve with giardiniera.
Mac & Cheese
1 lb. uncooked elbow macaroni
1 tablespoons butter
3 tablespoons flour
1 qt. (4 cups) milk
2 bay leaves
6 oz. butterkäse or Havarti cheese, shredded (1 1/2 cups)
1 1/2 cups (6 oz.) shredded Cheddar cheese
Grated Parmesan cheese
Salt and pepper
Instructions
1. Cook macaroni according to package directions; drain.
2. Heat oven to 400°F. Melt butter in saucepan over medium heat. Add flour; stir with wood spoon until smooth and flour starts to have a cooked smell. Slowly whisk in milk; add bay leaves and bring to a boil. Reduce heat and simmer 15 minutes. Remove by leaves
3. Stir in cooked macaroni, butterkäse and Cheddar cheeses; season with salt and pepper
4. Pour into baking dish; sprinkle top with generous amount of Parmesan cheese. Bake at 400°F. for 20 minutes.
Cabbage with Bacon and Corn
4 slices Smithfield® Hickory Smoked Bacon, diced
1/2 head green cabbage, outer leaves removed, cored and sliced
1/2 onion, peeled and sliced
5 cloves garlic, minced
1 1/2 cups frozen corn
Salt and pepper
Instructions
1. Cook bacon in large, deep sided skillet until crispy. Add onions and garlic; cook 1 minutes.
2. Stir in cabbage; cook until starts to breakdown. Continue cooking another 5 to 10 minutes until tender with a little crunch.
3. Add corn, cook and stir 2 minutes. Season with salt and pepper before serving.
