1. For Mojo Marinade, combine all ingredients in blender or food processor; blend until smooth (may do in batches). Rub pork chops with marinade; cover and refrigerate 2 to 8 hours.
2. Place baking sheet on center rack in oven; heat oven to 400°F. Heat 1 tablespoon oil in large skillet over medium-high. Remove 4 chops from marinade and place in skillet to brown, about 2 minutes per side; remove from skillet and place on plate. Repeat with remaining 4 chops.
3. Arrange all 8 chops on baking sheet in oven. Roast until internal temperature reaches 145°F to 160°F, turning after 3 minutes. Let stand 3 minutes before serving.
