Grate zucchini and let sit on a colander and squeeze with both hands until the excess liquid is drained. In a non-stick pan cook sausage patties until brown. Cut them in small pieces. In a large bowl mix zucchini, eggs, flour, mozzarella and diced sausage. Add salt and pepper. Heat olive oil in a large skillet. Spoon mixture in the pan and cook both sides until brown and crispy.
