Curry Mango Sauce
1/2 teaspoon curry
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1 ripe fresh mango, peeled, pitted and pureed
Curry Rub
2 teaspoons smoked paprika
1 teaspoon curry powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat oven to 400°F. To make Curry Mango Sauce, combine all ingredients in saucepan; bring to a boil. Reduce heat and simmer.
2. To make Curry Rub, mix all ingredients together. Rub onto both sides of pork chops.
3. Add olive oil to large oven-safe skillet over high heat. Add pork chops to pan and sear for 1 to 2 minutes on each side.
4. Spoon 1 tablespoon Curry Mango Sauce onto each chop. Place pan in oven and roast about 10 minutes until internal temperature reaches 150o, about 10 minutes.
5. Meanwhile, take Curry Mango Sauce off heat when it has thickened some, total of about 7 minutes.
6. If desired, serve chops garnished with cilantro and crushed red pepper, with Curry Mango Sauce on the side.
