1. Spray 4- to 5-quart slow cooker with nonstick cooking spray. Heat 1 teaspoon oil in large skillet over medium-high heat. Working in 3 batches, cook 1/3 of the pork for 4 minutes, or until beginning to brown. Place browned pork in slow cooker. Repeat two more times, adding 1 teaspoon oil each time.
2. Heat 1/2 tablespoon oil, cook onions 3 minutes or until beginning to brown, stirring occasionally. Add to pork in slow cooker with wine, tomato paste, vinegar, bouillon granules, bay leaves and black pepper. Cover and cook on high for 4 hours (low: 8 hours).
3. Turn off slow cooker, stir in remaining 1 1/2 tablespoons oil; let stand, uncovered, 10 to 15 minutes to thicken slightly. While standing, prepare potatoes according to package directions.
4. Reserve 2 cups pork mixture for the Melted Provolone Ciabatta recipe. Serve remaining pork over potatoes.
