1. Prepare your clean spice jars with some bakers twine and labels if you intend to use the bacon salt as gifts.
2. Preheat the oven to 375 degrees and bake the bacon on a cookie rack placed on a jelly roll pan or cookie sheet. Bake until the bacon is very crisp, for about 30 minutes. Drain on paper towels and pat as much oil off the bacon as possible. Allow bacon to cool completely. Process bacon in a food processor until the slices turn into grainy bits.
3. Mix thoroughly with 3/4 cup of sea salt and add a teaspoon of freshly ground black pepper.
4. Pack into small jars. Keep stored and air tight in a refrigerator.
