For Mango Salsa
2 mangoes sliced in very small cubes
½ cup red onion chopped very small
½ cup red bell pepper chopped very small
¼ cup chopped jalapeño
2 tbsp. lemon juice
1 cup packed basil leaves
1/3 cup olive oil
Pinch of salt
Directions
Place basil, oil and salt in a food processor, puree until smooth.
Set aside. In a large bowl, mix mango, red onions, red pepper,
jalapeño and lemon juice. Season with salt and pepper. Mix
well, slowly add basil oil and set aside. Bring your grill to a
medium-low temperature, between 325-350°F. Place brats on the
grill, cooking until internal temperature reaches 160°F (about 20
minutes). Placing grilled brats in buns, spoon mango salsa on the
top. Serve immediately.
