1. In small bowl or cup, stir together balsamic glaze and honey until combined and reserve until needed.
2. Preheat oven to 400°F. Set wire baking rack on a foil-lined rimmed baking sheet. With small knife, starting from stem end, cut peaches in half around pit. Gently twist halves to separate and remove pit, cutting each half into 4 wedges. Tightly wrap one-half slice bacon around center of each peach wedge and place on prepared baking rack, loose end of bacon side down.
3. Bake for 25-30 minutes or until bacon is just starting to crisp and become lightly browned. Transfer peaches to platter and drizzle with balsamic-honey glaze and sprinkle with basil, serving immediately for best flavor!
Chef's Tips:
Prepare your own balsamic-honey glaze by simmering ½ cup balsamic vinegar and 2 tablespoons granulated sugar over low heat until reduced by half or becomes thickened like syrup. Stir in 2 tablespoons honey and let cool. Reserve any extra for future uses that need a good sweet-tart punch of flavor!
Keep the heat out of the kitchen and use the grill! Use a disposable rimmed foil baking pan with your wire rack and cook on the grill over medium-high heat, covered.
