1. Preheat oven to 400˚F. Heat oil in skillet set over medium heat; cook ham, onion, red and green peppers and thyme for 3 to 5 minutes or until ham is golden and vegetables are softened. Let cool slightly.
2. Meanwhile, grease 8 jumbo muffin cups. Fit tortilla into each muffin cup. Sprinkle cheese, then ham mixture evenly into bottom of each muffin cup.
3. Whisk together eggs, milk, salt and pepper; pour evenly into each tortilla cup. Bake in 400˚F oven for about 15 minutes or until filling is set. Let stand for 10 minutes; remove from muffin cups.
4. Make-ahead: Let cool completely; refrigerate for up to 3 days. To reheat, microwave on High for 60 to 90 seconds or until heated through.
Tip: For a hint of heat, add 1 diced fresh or pickled jalapeño pepper to quiche cups.
