Instructions:
1. Whisk together eggs, milk, salt and pepper; set aside. Heat oil in skillet set over medium heat; cook turkey, red pepper, chili powder and oregano for 3 to 5 minutes or until turkey starts to brown and red pepper is tender.
2. Pour in egg mixture. Cook, stirring frequently, for 5 to 8 minutes or until eggs are set and soft curds have formed. Let cool completely.
3. Toss avocado with lime juice; set aside. Sprinkle cheese down along center of each wrap, leaving 1-inch border at both ends. Top with turkey mixture and avocado. Fold up bottom and sides of tortillas to enclose filling. Wrap in foil. Bake wraps in 425°F oven for about 10 minutes or until heated through. Serve with salsa for dipping.
4. Make-ahead: Refrigerate prepared wraps in foil, then bake in the morning.
Tip:
Substitute store-bought guacamole for avocado if desired.
