Preheat oven to 425ºF.
Melt the butter in a large nonstick ovenproof skillet over medium-high heat. Add the onion and cook, stirring occasionally, until the onion is tender and lightly browned, about 8 minutes.
Meanwhile, whisk together the eggs, milk, chili powder and oregano in a large bowl. Stir in the cheese and Smithfield Spiral Sliced Ham.
Add the bread cubes to the skillet, tossing carefully with the onions. Cook, stirring, until the bread begins to brown slightly, about 4 minutes.
Remove the skillet from the heat. Quickly stir in the egg mixture until well mixed. Transfer to the oven and bake until the eggs are set and the filling is puffed and golden, 12 – 15 minutes. Serve sprinkled with the cilantro.
