- Wipe sweet potatoes clear of any dirt with a damp cloth then pierce the flesh of the potato with a fork to create a release for steam in the microwave.
- Cook potatoes on a microwave-safe plate on high for 12 minutes (5 minutes for the first potato and 2 minutes for every potato after) making sure to carefully flip halfway through cooking.
- Remove potatoes from microwave to cool. Prep a nonstick skillet with cooking oil and add beaten eggs for scrambling. Cook eggs over medium-low heat, stirring to create small-sized curds. Season to taste with salt and pepper.
- Carefully cut potatoes lengthwise and use a fork to mash up the flesh inside. Top with crumbled Smithfield Sausage Patties and scrambled eggs.
