Preheat oven to 350°F. Grease a 9x13-inch dish with nonstick spray.
In a large nonstick skillet over medium-high heat, cook the bacon for 5 minutes stirring occasionally. Add the diced onion and garlic to the bacon and continue to cook for another 5 minutes until the bacon is cooked and onions are translucent.
Next, add the bacon, onions, sausage, peppers, mushrooms, cheese and tater tots in a mixing bowl and fold ingredients together.
Put mixture into the pan and set aside. In a separate bowl, mix eggs, milk, salt and pepper together and pour over tater tot mixture.
Bake casserole for 40-45 minutes. Remove from oven and sprinkle with green onions.
