1. Preheat oven to 350˚F. Place spinach in microwavable bowl. Cover with plastic wrap; microwave on High for 1 to 2 minutes or until starting to wilt. Cover and let stand for about 5 minutes or until cooled. Place spinach in tea towel and squeeze out excess moisture.
2. In large bowl, combine sausage, spinach and bread cubes. In separate bowl, whisk together eggs, cream, thyme, salt and pepper; pour over bread mixture, tossing to combine. Stir in goat cheese; let stand for 10 minutes.
3. Scoop evenly into 12 greased muffin cups. Let stand for 20 minutes, or cover and refrigerate overnight. Bake for 20 to 25 minutes or until golden and set in center.
4. Make-ahead: Let cool completely. Cover and refrigerate for up to 2 days. Reheat in toaster oven or microwave.
