1. Preheat oven to 375°F. Whisk together eggs, milk, salt and pepper. Melt butter in large nonstick skillet over medium-low heat; pour in egg mixture. Cook, stirring frequently, for 5 to 8 minutes or until eggs are set and soft curds have formed.
2. On work surface, separate crescent roll dough into 8 triangles. Place a spoonful of ham on base of each dough triangle. Top with scrambled eggs and cheese. Roll up, starting from base. Transfer to parchment paper–lined baking sheet, about 2 inches apart.
3. Bake for about 12 minutes or until pastry is golden brown.
4. Make-ahead: Let cool and refrigerate roll-ups. Reheat in toaster oven or bring to room temperature.
Tip: Substitute Swiss or Havarti for Cheddar cheese if desired.
