Make instant grits following the package instructions. Pour into a greased 12x8 casserole dish, place in refrigerator overnight. Cut grits into 12 squares. Heat butter in a large pan over medium heat. Add grit cakes and cook until golden brown on both sides. In a separate pan cook bacon until crispy on the edge. Cut in pieces. Sprinkle them on grit cakes. Top with scallions. Serve warm.
