1. Prepare grill for direct grilling over medium-high heat. On rimmed grilling pan or iron skillet, cook bacon for 10-12 minutes or until bacon is cooked through and just crisp; cook in batches if needed. Remove bacon from pan, drain on paper towels and reserve, cutting into 1-inch pieces when cooled. Carefully drain fat from pan, reserving about three tablespoons.
2. In large bowl, add reserved bacon fat, herbs, garlic powder, salt and pepper and stir to combine. Add potatoes and onions and toss to evenly coat. Return pan to grill and spread out potato mixture in even layer. Cover grill and cook for 20-25 minutes or until potatoes are cooked through and lightly browned, stirring potatoes and rotating pan as needed for even cooking. Stir in reserved bacon and cook for additional five minutes or until potatoes are golden and crispy. Top with green onions to garnish and serve hot!
