- Place Bacon Pancakes in a toaster to warm through. Set aside.
- Heat frying pan to medium and place butter in the pan to melt. Once butter is sizzling, place mason jar rings in a frying pan and crack eggs individually into mason jar lids and cook until whites begin to set. Turn heat down to medium-low and cover eggs for approximately 2-3 minutes; season with salt and pepper.
- While eggs are cooking, assemble breakfast sandwiches by placing one slice of cheese on the top inside a piece of your pancake. Place cooked eggs on the bottom piece and put pancakes together to create a sandwich.
- Once cooked, wrap sandwiches in foil and place in a ziplock bag and freeze for personalized breakfast to go.
HACK: Use mason jar lids to cook perfect round eggs for sandwiches.
