Preheat oven to 425°.
Place a 12-in cast iron skillet into oven and allow to preheat for 8-10 minutes.
In a blender, combine eggs, milk, half of butter, flour, salt and pepper and blend until smooth.
Add remaining butter into preheated skillet and immediately pour in batter. Quickly top with spinach, Canadian bacon and smoked Cheddar and place in oven.
Cook until puffed and brown, approximately 25 minutes. Pancake will begin to deflate as soon as it comes out.
