1. Preheat oven to 425˚F. Line baking sheet with parchment paper.
2. Heat canola oil in large skillet set over medium heat; cook sausage meat, breaking up with wooden spoon, for about 5 minutes or until meat is browned and cooked through. Let cool completely.
3. To assemble taquitos, spoon 2 tbsp. of sausage meat down along center of each tortilla; sprinkle 2 tbsp. of cheese over top. Roll up tightly and place on baking sheet. Repeat with remaining tortillas. (Line up taquitos tightly, side by side, on baking sheet.)
4. Brush taquitos lightly with olive oil; bake for 8 to 10 minutes or until golden brown all over.
Serve with guacamole, salsa or sour cream for dipping.
